Ingredients
  

  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • ½ small white or yellow onion diced
  • ¼ teaspoon red pepper flakes add more as desired
  • 1 15-ounce can or 1 ½ cups cooked chickpeas, drained & rinsed
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 1 cup coconut milk or cashew cream
  • 3/4 cup vegetable broth
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • ¼ cup fresh basil chopped
  • ¼ teaspoon sea salt plus more to taste
  • ¼ teaspoon ground black pepper plus more to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add garlic, onion, and red pepper flakes. Sauté for 2 minutes until fragrant. Stir in chickpeas, sun-dried tomatoes, Italian seasoning, and smoked paprika. Cook for another 2 minutes.
  • Pour in coconut milk and vegetable broth. Stir in nutritional yeast. Simmer for 10 minutes, stirring occasionally, until the sauce thickens.
  • Stir in lemon juice, fresh basil, salt, and pepper. Add more salt and pepper to taste.
  • Serve over pasta, rice, or with crusty bread.
