Pecan Pumpkin Party Bites

These Pecan Pumpkin Party Bites are a delicious no-bake, vegan, and gluten-free snack. Serve them with a Maple Cream Cheese Glaze for the perfect fall party treat!

Ingredients
  

Party Bites:

  • Pecans or vegan graham crackers for coating, (optional)
  • 1 cup pecans
  • ½ cup oats
  • ½ cup dates
  • ½ cup raisins
  • ½ cup pumpkin
  • 1 ½ teaspoons pumpkin spice
  • ¼ teaspoon sea salt
  • Additional sweetener granular, if desired (recommended 1-2 tablespoons date sugar)

Maple Cream Cheese Glaze:

  • 1/2 cup cream cheese softened at room tempurature
  • 2-3 tablespoons maple syrup

Instructions
 

  • If you wish to coat the party bites in pecans or graham crackers, process the coating of choice in the food processor until it is processed into a flour consistency.
  • To make the party bites add the pecans and oats to a food processor, pulse to break the pecans down into a crumbly consistency. Add the dates, raisins, pumpkin, pumpkin spice, and salt. Pulse to combine until all of the ingredients are mixed together into a ball of dough.
  • Spoon the mixture out one tablespoon at a time and form balls on a baking sheet lined with parchment paper. If using coating, roll the bites in the coating of choice.
  • Refrigerate for one hour to firm up a bit. Serve with maple glaze on the side for dipping.
  • For the maple glaze, add the cream cheese and maple to a bowl and mix to combine, add more maple for sweetness and to thin the glaze, if desired.
