Quinoa Bacon Bits

BACON! Everyone is obsessed with it, vegans and non-vegans. Personally, it’s not a must in my life but I do enjoy the addition of smoky flavors every now and then so I created these Quinoa Bacon Bits particularly for the Loaded Baked Potato Soup (recipe page x) but you will find use for it on several recipes in this book and just to have on hand for desired use as a daily staple, I often double or triple the batch when I make it, it goes that fast!

Ingredients
  

  • ½ cup quinoa prepared
  • 1 ½ teaspoons soy sauce
  • 1 teaspoon olive oil
  • 1 teaspoon ketchup
  • ½ teaspoon smoked paprika
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • In a bowl mix together the quinoa, soy sauce, olive oil, ketchup, smoked paprika, salt and pepper.
  • Heat a non-stick skillet over medium heat, add the quinoa mixture and spread in one layer on the skillet. Let cook for two minutes, don’t touch it, it will be hard to resist. After two minutes, using a firm or wooden spatula, scrape the quinoa off the pan and mix it around and situate it into another single layer and let cook for an additional two minutes. Transfer the quinoa to a bowl, scraping the pan to get the crispy tasty bits.
