Vegan Blondies

This vegan blondies recipe is soft, chewy, and packed with brown sugar flavor! These blondie bars use simple ingredients like flax egg, almond butter, and chocolate chunks for the best vegan blondies. A must-try vegan dessert!

Ingredients
  

  • ½ cup vegan butter melted
  • ¾ cup dark brown sugar packed
  • ¼ cup organic cane sugar
  • ¼ cup unsweetened non-dairy milk
  • 1 tbsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup dairy-free chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • In a bowl, whisk together melted vegan butter, brown sugar, cane sugar, non-dairy milk, and vanilla until smooth.
  • Sift in flour, baking powder, and salt. Stir until just combined (don’t overmix). Fold in chocolate chips. Spread the batter evenly into the prepared pan.
  • Bake for 32-36 minutes, until golden and set. A toothpick should come out clean when done baking.
  • Cool completely before cutting into 12 pieces.
