Baked French Toast Sticks

If you loved frozen French toast sticks as a kid, this homemade version will bring back all those memories—but without the extra additives! These Baked French Toast Sticks are crispy, cinnamony, and absolutely delicious.

Ingredients
  

  • ¼ cup 32 g flax meal
  • ½ cup 120 ml water
  • ½ vegan baguette cut into 12 sticks
  • ¼ cup 60 g unsweetened applesauce
  • 2 tablespoons 14 g ground cinnamon
  • 3 tablespoons 36 g organic cane sugar
  • ¼ teaspoon sea salt
  • 1 tablespoon 15 ml vanilla extract
  • Cooking spray
  • Maple syrup

Instructions
 

  • Preheat the oven to 350°F (175°C, or gas mark 4). Line a sheet pan with parchment paper.
  • In a bowl, combine the flax meal and water. Set aside to thicken for 5 minutes. While it thickens, cut the bread into 1-inch (2.5-cm)-thick and 4-inch (10-cm)-long pieces, 12 sticks total. A baguette works best.
  • Add the applesauce, cinnamon, sugar, salt, vanilla, and the flax mixture to a large bowl. Mix until combined.
  • Spray the sheet pan generously with cooking spray. Dip the bread sticks into the mixture, quickly coating on all sides but not submerging. Avoid making the sticks soggy with the mixture. Transfer to the prepared sheet pan and continue dipping bread sticks until all are coated.
  • Bake for 15 minutes. Gently slide the spatula under each stick completely and flip each one.
  • Bake for 15 minutes, until dark brown and crispy. Serve warm with maple syrup.

Notes

These can also be made ahead and frozen—yup, just like the ones you used to get at the grocery store! After baking, let them cool completely and transfer to an airtight container or resealable plastic bag. Store in the freezer for up to 4 months. To reheat in the microwave, simply arrange on a microwave-safe plate and heat for 30 to 60 seconds, until heated through. To reheat in the oven, arrange on a parchment-lined sheet pan and bake at 350°F (175°C, or gas mark 4) for 12 minutes, or until warmed through.
