Instructions
Make the Dressing: Start by whisking together the juice of two limes, one tablespoon of olive oil, maple syrup, and sea salt in a small bowl. This tangy and slightly sweet dressing will add a burst of flavor to your bowl.
Cook the Corn and Beans: Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the corn and cook for about 3 minutes until it’s bright yellow. Then, add the drained black beans, cooked brown rice, and taco seasoning. Stir everything together and let it cook for an additional 2 minutes until the beans are heated through and everything is well combined.
Assemble the Bowls: Add the chopped romaine hearts to a large bowl, drizzle with the lime dressing, and toss to coat the lettuce evenly. Divide the dressed lettuce among four serving bowls. Top each bowl with the warm corn and black bean mixture, followed by the halved cherry tomatoes.
