Lemon Tahini Oat Bites are a refreshing, healthy, and easy-to-make snack that can be enjoyed anytime. Their naturally sweet flavor and chewy texture make them a delightful treat without any guilt.
Add ½ cup oats to the food processor and pulse until broken down into a coarse flour, transfer to a small bowl and set aside.
Add the remaining oats to a food processor and process a few times just to break the oats down into smaller pieces, do not process into flour, there should still be some texture.
Add the dates, tahini, maple syrup, lemon juice, vanilla, and sea salt and pulse until a sticky dough forms. Form balls using 1 tablespoon of the mixture per ball. Roll finished balls in the course oat flour.
