Lemon Tahini Oat Bites

Lemon Tahini Oat Bites are a refreshing, healthy, and easy-to-make snack that can be enjoyed anytime. Their naturally sweet flavor and chewy texture make them a delightful treat without any guilt.

Ingredients
  

  • 2 cups rolled oats divide
  • 1 cup packed pitted dates
  • ¼ cup tahini
  • 2 tablespoons maple syrup
  • Juice of 2 lemons
  • ½ teaspoon vanilla extract
  • teaspoon sea salt

Instructions
 

  • Add ½ cup oats to the food processor and pulse until broken down into a coarse flour, transfer to a small bowl and set aside.
  • Add the remaining oats to a food processor and process a few times just to break the oats down into smaller pieces, do not process into flour, there should still be some texture.
  • Add the dates, tahini, maple syrup, lemon juice, vanilla, and sea salt and pulse until a sticky dough forms. Form balls using 1 tablespoon of the mixture per ball. Roll finished balls in the course oat flour.
  • Store in the refrigerator for up to a week.
