How to Make Lemon Tahini Oat Bites

Step 1: Prepare the Oats

  1. Add ½ cup of the rolled oats to a food processor and pulse until they break down into a coarse flour. Transfer to a small bowl and set aside.
  2. Add the remaining 1½ cups of rolled oats to the food processor. Pulse a few times to break down the oats into smaller pieces but leave some texture—do not turn them into flour.

Step 2: Make the Dough

  1. Add the pitted dates, tahini, maple syrup, lemon juice, vanilla extract, and sea salt to the food processor with the partially broken-down oats.
  2. Pulse until the mixture forms a sticky dough. It should stick together easily when pressed.

Step 3: Form the Bites

  1. Use a tablespoon of the mixture to form each ball. Roll each ball in the reserved coarse oat flour to coat.
  2. Place the finished bites in an airtight container and store them in the refrigerator.

Storage: Store in the fridge for up to a week.
