Vegan Mashed Potatoes

Ingredients
  

  • 3 pounds Yukon gold potatoes peeled and cubed
  • Sea salt
  • ¼ cup vegan butter
  • ¼ cup unsweetened soy or almond milk
  • Freshly ground black pepper

Instructions
 

  • Put the potatoes in a large stockpot, cover with water, and generously salt the water. Cover and bring to a boil over medium-high heat. Cook for 12 to 18 minutes, until fork-tender. The potatoes should break apart when poked with a fork. Drain and return to the stockpot.
  • Add the butter and milk. Mash with any type of masher you have on hand until you reach your desired texture. Season with salt and pepper.
