  • Cooked brown rice
  • Low sodium canned lentils, drained and rinsed (or cooked lentils)
  • Avocado
  • Unsweetened sunflower butter
  • Juice of 1 orange
  • Juice of 1 lemon
  • Ground turmeric
  • Sea salt
  • Optional toppings: Sauerkraut, beet sauerkraut, or Universal Meals Quick Pickled Vegetables, hemp seeds

How to Make the Magic Macro Bowl:

  1. Prepare the Kale: Start by adding the kale to a large bowl. Drizzle it with olive oil and massage the oil into the kale using your hands. Ingredients
  

  • 4 cups 100 g kale
  • 1 teaspoon olive oil see notes for oil free
  • 4 cups roasted cauliflower
  • 2 roasted sweet potato halved and sliced
  • 2 cups cooked brown rice
  • 1 ⅓ cup canned low sodium lentils or 1 ⅓ cup cooked lentils drained and rinsed
  • 1 avocado
  • ¼ cup unsweetened sunflower butter
  • Juice of 1 orange
  • Juice of 1 lemon
  • ½ teaspoon ground turmeric
  • ¼ teaspoon sea salt
  • Sauerkraut Beet sauerkraut or Universal Meals Quick Pickled Vegetables, optional
  • Hemp seeds optional

Instructions
 

  • Add the kale to a bowl and drizzle with olive oil, massage the oil into the kale with your hands until the kale is darker in color and reduces slightly in size.
  • Divide the kale, cauliflower, sweet potato, brown rice, lentils, and avocado among four serving bowls.
  • Add the sunflower butter, orange juice, lemon juice, turmeric and salt to a bowl, whisk until everything is combined and you have a dark yellow dressing.
  • Drizzle each bowl with desired amount of dressing. Top with sauerkraut and sprinkle with hemp seeds, if using.

Notes

OIL FREE: Omit the oil and massage the kale with a sprinkle of water instead.
